Beans are an excellent source of fiber and protein. If eaten with brown rice you have yourself a complete protein. Many people complain of gas or bloating when eating beans. The recipe below will help make beans more digestible, breaking down difficult to digest complex sugars. Try it out and see how you do. I have had patients go from not being able to eat beans at all to eating them regularly when they make sure to prepare the beans in this way.
Basic Beans
(makes 8-10 cups cooked beans)
2 Cups Black Beans, kidney beans, pinto beans, black-eyed peas or white beans)
Warm Water Filtered
2 Tablespoons Whey or lemon juice (not powdered whey)
Salt/Pepper
Cover beans with warm water. Stir whey or lemon juice and leave in a warm dry place for 12-24 hours. Drain, rinse, place in a large pot and add water to cover beans. Bring to a boil and skim off foam. Reduce heat, simmer for 4-8 hours. You can also make these beans in the crockpot.
